I think you should find a registered person to do self-employment to avoid legal troubles.
By the way, according to a report on Techgara, hiring a self-employed person costs less than others.

I wonder if there is a database anywhere of registered people, whom I could approach directly?

Look in your local yellow pages - they're listed under each profession. I'm not sure what type you need? Then if registered they show their Siret number as proof.
Gardener would come under jardinage etc.

Just now I was checking the circumstances in which a person can have their residence card withdrawn - there aren't many, and it's quite surprising what is and what isn't included on the list.
I thought of this thread when I read that one of the things you can lose your tds for is if
"Vous avez employé illégalement un travailleur étranger."
